I have installed hyperion latest version (i have via chipset) and the via latency patch (but it's official???).
The problem remain. The phenomena is extremely random!

Hmm, I would not use the Hyperion Drivers on that older chipset. The hyperion drivers were desinged for chipsets like the KT 400.

I run via hyperion drivers on an "old" chipset, and I have no problems. Try running memtest http://www.memtest86.com/ you have to create a floppy to run it. If you recieve any errors your ram could be faulty or you're running it at too high speed.

What os are you running?

VIA also recommends using the latest Hyperion drivers for only Win2K/XP as they are optimized for these OS's. They recommend v4.45 as the latest release that was optimized for Win 9x OS's
