Unfortunately, my course on Active Directory in school is next quarter and I was hoping to practice some over the holidays.

If you have the time, just kind of play around with it, the help menus are generally decent. Don't be afraid to format and reinstall, several times if necessary. If you have a second computer, you can set up RIS (Remote Installation Services) and play around with that... That's the ability to install an OS image very quickly over a network. As DS3Circuit said, any questions, just ask.
