XP Pro eating all my RAM during file transfers

For example, when I want to transfer a large file (400-800Mb) from one partition to another, or when I extract a big file of the CDrom, XP starts eating away at the RAM. Soon it's down to nothing RAM and it recovers some, but soon it's zero again.

Soon it's down to nothing RAM and it recovers some, but soon it's zero again. During this point the computer is very slow and shuggy.
 
Is there anything I can do to get rid of this annoying problem? Don't say "get more RAM" now
 
There is 512Mb of RAM. I use the latest VIA 4-1s and all the HDDs operate through the HPT370 ATA100 controller. HDDs are ATA100s and one ATA66.
